Angelini Grill Bruschettaappetizers, restaurant 2 ripe plum tomatoes 3 leaves fresh basil 1 teaspoon chopped fresh parsley 3 tablespoon extra-virgin olive oil 1 salt and pepper to taste 2 crusty italian rolls 1 centiliter garlic, cut in half Finely chop the tomatoes and basil. Mix them in a bowl with parsley and olive oil. Season with salt and pepper, to taste. Cut the rolls in half. Toast them under a hot broiler for a few minutes, until nicely golden. Remove from oven, and rub the toasted side generously with the cut side of the garlic clove. Top each piece with a portion of the tomato mixture and serve immediately.
