Mock Crawfish Saladfish, salads, cajun, kosher 3 lb red snapper fillets 4 slices lemon 1 small onion sliced 1 cup celelry, chopped fine 1 large carrot, grated 2 quart water 1 small onion minced 3/4 cup chili sauce 2 teaspoon salt 1/4 teaspoon pepper 1 cup mayonnaise Bring water to boil in large kettle. Add red snappes, lemon, sliced onion, sald, and pepper. Continue to boil for 20 min. Drain fish; cool and flake. Toss fish with minced onion, celery, carrot, chili sauce, and mayonnaise. Adjust salt and pepper to taste. Chill overnight.
