Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

 

Blue Cheese Dip With Crudit‚s


vegetarian, dips, spreads

40 oz stilton or other blue cheese
1/2 small onion; grated
100 gm natural yogurt
1 paprika; to taste
1 various raw vegetables

Dips are wonderfully simple to prepare, and can be served as a snack before a meal, or as part of a salad table. This one, best made with Stilton, has a rich flavour that is beautifully balanced by the raw vegetables dipped into it. Mash the blue cheese and mix it with the grated onion. Put into the blender with the yogurt and liquidize to a dipping consistency. Season to taste with paprika and serve with sliced raw vegetables such as baby carrots, cucumber, cauliflower, courgettes, mushrooms, French beans and celery.
